POMEGRANATE KOSAMBARI


Kosambari, otherwise known as Koshambari is a typical South Indian salad. Kosambari is very much popular in Karnataka state and is distributed during festive seasons like Ganesh Chathurti and Rama Navami. During Varalakshmi Puja and Gowri Puja, Kosambari is distributed along with turmeric and vermillion(Kumkum).

Basic Kosambari is made using bengal gram or green gram, grated coconut and grated carrot.

In Pomegranate Kosambari, pulses can be replaced by pomegranate.

So, get started with the recipe now.

Ingredients:

For 2 serving:

Pomegranate seeds - 1 cup

Grated carrot -½ cup

Grated coconut - ½ cup

Green chilli - 1/2

Pepper - pinch

Salt - to taste

Lemon juice - ½ tsp

For seasoning:

Oil - 1mL

Mustard seeds - ½ tsp

Red chilli - 1

Instructions:

  • Add Pomegranate seeds to the mixing bowl.

  • Add the grated carrot, coconut and green chilli to the same bowl.

  • Add a pinch of pepper and salt.

  • Toss everything with a spoon.

  • Add lemon juice and give it a mix.

  • Add the seasoning made of mustard seeds, oil and red chilli.

  • Serve and enjoy this Indian salad.

Pomegranates:

Pomegranates are rich in folate, other B vitamins, Vitamin C, E and K.

Pomegranates are also a great source of potassium, phosphorus and magnesium.

Carrot:

Carrots are a great source of Vitamin A. This improves eye sight, gives glowing skin and prevents cancer.

Coconut:

Coconut contains B vitamins, fiber and minerals like copper, manganese, potassium and phosphorus. Helps reduce heart disease and the fatty acids in it provides glow to the skin.
