RECIPE#2: SWEET POTATO ROTI

Sweet potato is the starchy vegetable, which is loaded with complex carbohydrates, fiber, vitamins and minerals. Sweet potatoes are rich in beta carotene, which helps to improve eyesight, skin and prevents free radical damage. Moreover, it contains resistant starch, which makes it possible to regulate blood pressure, lowers blood sugar and helps maintain gut health.

Many tend to make kootu or even boil the sweet potatoes and add jaggery syrup to it. So, if you wanna add variety to the regular way of consuming sweet potatoes, this article is for you. Yeah!! Try this sweet potato roti tonight, which can't be denied by the kids.


SWEET POTATO ROTI:


Sweet potato roti is a good choice when it comes to gain weight or to make a nutritious meal for the growing kids. Two sweet potato roti can provide an average of 250 Calories.


INGREDIENTS:( for four rotis)

Wheat flour : 1 cup

Sweet potato: 1

Ajwain: 1 tsp

Turmeric powder: 1/2 tsp

Chili powder:1tsp

Kasuri methi: 1tsp

Salt: to taste

Coriander leaves : few

Oil: 1 tsp

Water: for kneading


INSTRUCTIONS:

  1. Wash the sweet potato under running water.

  2. Pressure cook the sweet potato for three whistles.

  3. Cool and peel the skin.

  4. Smash the sweet potato and add the wheat flour.

  5. Now, add ajwain, turmeric, chili powder, kasuri methi,salt and coriander leaves.

  6. Add oil and water.

  7. Knead the mixture together to make a dough.

  8. Rest them for 20 minutes.

  9. Make balls and roll them, using rolling pin.

  10. Place the roti on hot tawa and cook for a minute.

  11. Apply ghee on both sides and flip the rotis.

  12. Enjoy the freshly made sweet potato roti with mint or tomato chutney.
